Recipe Tag

Here's a different spin on those fun tags! I know we all need new recipes, so share a few and tag a few friends so we can all add to our collections! Share 3 of your favorites recipes, tag 3 or more of your favorite bloggers and let the food fun begin!

Penne Pasta with Broccoli and Sauce

12 oz penne pasta- white or wheat
12 oz. hot Italian turkey sausage
1 lg. bunch broccoli, cut into florets
1 pt. grape tomatoes cut in half
1/2 c. sliced zucchini
1/2 c. loosely packed fresh basil leaves, chopped
1/4 c. freshly grated Pecorino Romano cheese
Boil pasta as directed and add broccoli in the last 3 minutes. Drain saving 1/2 c. of the cooking water. Thinly slice the sausage on the diagonal. Cook sausage on med. heat 7-8 minutes or until they begin to brown. Add tomatoes and zuki and cook 5 more minutes. Stir pasta, broccoli, and reserved cooking water into the sausage mixture. Heat through and add water if needed. Remove from heat; stir in basil and cheese.

Tuscan Pizza Calzones

5 Tbs. oil
2 1/2 med green, red and yellow bell peppers, thinly sliced or julienned
2 sm yellow onions thinly sliced or julienned
1/4 c. fresh basil, chopped
1/4 c. fresh parsley, chopped
3-13.8oz rolls pizza crust dough
As needed flour for dusting
2 1/2 c. mozzarella cheese
8 oz. sliced peperoni
1 1/4 c. pizza sauce plus some extra for dipping

Preheat oven to 400 degrees. Heat oil and saute onions and peppers 3-4 minutes. Stir and basil, parsley and salt and pepper to taste. Remove from heat and let cool. Divide dough into 5 equal size pieces. Roll into a ball. Roll out into 10" circle dusting with flour if needed. Spread 1/4 c. pizza sauce into the dough leaving a 1 inch border. Sprinkle 1/4 c. cheese, add 10 slices of peperoni and top with pepper/onion mixture then add another 10 slices of peperoni. Lightly wet the edge of the dough and then fold over creating a half moon. Crimp the edges with a fork. Spray a cooking sheet and bake 40 minutes or until the outside is brown. Remove from oven and sprinkle with basil, parsley and parmesan cheese if desired. Let cool 5-10 minutes.
**Omit pepper/onion mixture for the kids.

Any fruit Cobbler

3/4 c. brown sugar
3/4 c. flour
3/4 c. oats
1/2 stick of butter
1 can any pie filling- apple and peach are my favorites!

Mix together brown sugar, flour and oats. Melt butter and pour over mixture. Pour pie filling into the bottom of a 9x9 greased pan. Sprinkle topping over fruit. Bake at 350 degrees for 30 minutes.

Ooooooo, I'd try all those IF MY DANG OVEN WORKED.....I made some killer artichoke parmesan dip in the crock pot last night though. How was stampin up? I was FREEZING at the boys' soccer games.

Oh man, those sound so good. Why am I so interested in new recipes but NEVER in to making them? I guess I just am not in to it...although I really wish I was! How do I get motivated?

Good question Jennie! These past two weeks I cooked dinner once. No, really. I guess I was just tired of cold cearal, toast and cheese crisps. These looked good now I'm excited to cook them. Come on, try them!

Hey Kasey, Thanks for the comments! Wow, isn't the whole delivery thing so surreal? Now its all a blur...and down to the fun stuff...I think I slept, what? 2 hours last night! :) Although he is a good sleeper, still having a little trouble with the eating part. I guess it just takes time. Hope you guys are doing great. You have the cutest pictures of your kids. Love, Karen
