Recipe in 2's

I had about 4 banana's sitting on my counter and thought banana bread is sounding divine this morning. So, I baked some. Divinity it was! Here is the easiest recipe ever for this delish treat!

Banana Bread
Cream:
3-4 bananas
1 stick butter
1 c. sugar
Add:
2 eggs
Mix in:
2 c. flour-white, wheat or half and half (I did half and half because I only had 1 c. wheat flour)
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
Optional add in's:
1/2 c. nuts
1/2 c. chocolate chips
Pour into well greased bread pan or 9x9 baking dish. Bake at 350 degrees for 45min to 1 hour. If you bake too long you can't go back. My oven takes about 50 minutes.


Beef Enchiladas
1 1/2 pounds browned ground beef- add salt, pepper and garlic to taste
3 1/2 c. shredded cheese
1 lg can red enchilada sauce
8 corn tortillas
Pour enchilada sauce in a separate bowl. Grease a 9x9 pan. Dip each tortilla in enchilada sauce. Layer in the bottom of pan. Pour a little of the sauce into the meat just to coat it. Layer 1/2 of the meat on top of tortillas. Sprinkle half the cheese on the meat. Layer with tortillas, meat and cheese again. Bake at 400 degrees for 15 minutes. Top with lettuce, sour cream, salsa, green onions and tomato.
I love to cook, but I don't love to be in the kitchen for a long time. These 2 recipes take little time and are super yummy! As do most of the recipes I post. I have found short cuts to great meals I'm happy to share with everyone!

You husband is lucky to have such a good cook:)! I always cook the same things and they don't look as good as that, perhaps I might steel those!
